Quinoa is a type of protein that is rarely found in plant foods, though common in meats. It also offers a good dose of fiber and iron. And, it’s sooo tasty!
Here is a great salad for you to try:
Cook the quinoa: for each 1 cup of uncooked Quinoa, use 2 cups of water. Bring to boil, and cook for 20 minutes. This will double or even triple the amount of Quinoa you started with, depends on the type of Quinoa you used.
Mix together the following ingredients: * 1 cup of cold cooked * ¼ cup of chopped red onion * ½ cup of chopped cilantro (you can use the stalks as well) * 10 mint leaves (no stalks) * ¼ cup of Dried cranberries * 5 chopped Kalamata olives
Seasoning – according to taste: * Olive oil * Fresh squeezed lemon juice * Salt
