A quick, healthy meal on the go!

Gazpacho is a Spanish cold soup made of raw vegetables, super tasty, healthy and refreshing! If you don’t have much time and need to prepare a meal to go, this can be a perfect solution for you.

Ingredients for a single person portion (14 oz): Medium tomatoes – 2 Small peeled cucumbers – 2

Yellow pepper – 0.5

Small purple onion – 0.5

Garlic clove – 1

Teaspoon olive oil – 1

Salt / Pepper according to taste

1. Cut all of the vegetables into large chunks and place them in a tall wide cup (a measuring cup can work great!)

2. Use a hand blender to blend the vegetables to the texture you desire (I recommend: almost smooth puree)

3. Add the olive oil, the salt and the pepper and blend a few more seconds.
